Grandma Billing's Banana Nut Bread

1 3/4 cup flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2/3 cup sugar
1/3 cup shortening
2 eggs
2 tbsp milk
1 cup mashed banana
1/4 cup chopped nuts


  • Cream sugar & shortening till light
  • Stir together flour, baking powder, baking soda, and 3/4 tsp. salt. Set aside.
  • Add eggs one at a time & the milk beat till smooth after each addition. Add flour mixture & banana alternately to creamed mixture, beating till smooth after each addition. Fold in nuts.
  • Turn batter into a lightly greased 8x42 inch loaf pan
  • Bake 350 degrees for 60-65 min.
  • Cool 10 min.
*For easier slicing wrap & store overnight

Brown Sugar Dip

1 cube cream cheese
1 cup brown sugar
chocolate covered toffee bits

Warm ingredients and mix together using hand mixer.

Watermelon Smoothie

4 cups Watermelon, cubed
1 ripe Banana, chopped
4 tablespoons of fresh squeezed Lime Juice
1 ½ cup vanilla yogurt
1 cup ice 
If needed, add sugar to taste
Some recipes also add 1 cup strawberries

Feta or Blue Cheese
Candied almonds
Brianna’s poppy seed dressing

Sauté sliced almonds in butter, sugar, and a little vanilla. Toss ingredients, enjoy!

Gina's Ham and Pea Linguini

8 oz. linguini 
4 tbsp. butter 
3 tbsp Flour 
1/4 tsp Salt 
2 1/2 cups Milk 
1 package Frozen Peas 
2 Cups cubed Ham 
1 Cup Grated Cheese

Cook linguini, meanwhile melt butter in a sauce pan over medium heat, then stir in salt and flour. Cook for 1-2 minutes, gradually stir in the milk, cook for 5-10 minutes stirring often till it is creamy. Add cheese and peas. Coat 9 X 13 pan with butter. Put in Linguini and ham, then pour sauce mixture over the top. Cover with more cheese. Bake at 325 for 30 minutes.

Shauna's Baked Candied Yams

6 medium yams

1 cup firmly packed brown sugar

¼ cup water

1 tsp. cinnamon

½ tsp. ground cloves

½ tsp. nutmeg

½ cup butter

 

(I also use one 16 oz. can candied yams in syrup with nutmeg and cinnamon, but it isn’t necessary.)

 

Preheat oven to 350 degrees.

 

Place yams in large pot, cover with water, and boil for 30 minutes. Allow them to cool.

 

In another saucepan at low heat, add 1/4 cup water and sugar and heat until the sugar is melted.  Add 1 tsp. cinnamon, ½ tsp. ground cloves, and ½ tsp. nutmeg to the melted sugar.

 

Melt butter.

 

Peel yams and cut in large chunks. Place them in a buttered 9 x 13 inch pan in one layer.  If you choose to use the canned yamsin syrup pour the entire contents of the can over the cut yams. Spoon the melted butter over the yams. Then spoon the melted sugar. Bake 35-45 minutes or until candied.

 

After the yams are candied, add miniature marshmallows to the top and brown for 3-5 minutes.

Janette's German Pancakes

6 eggs
1 cup flour
1 cup milk
1/4 tsp salt

Melt 4 tbsp butter (1/2 stick) in 9x13 pan while oven preheats to 400 (it won't need the whole time so keep an eye on it). Pour in the batter. Bake for 20-25 minutes.
