Regan's Pork Burritos

3 lbs. pork tenderloin
1 chopped onion
2 cloves garlic, minced
3 tbsp. butter

Sauté onion and garlic in butter. Put roast in crock pot and cover with onion. Cook about 3 hours on high (or low equivalent). Drain off juice (save in fridge) and shred pork. Add the following to pork and cook an additional 2 hr on high (or low equivalent).

*I usually just put it in for 3 hours during church for the second time and it's always turned out fine, but our crockpot has a timer on. If yours doesn't have a timer just watch that it's not getting too dry.

2 tbsp soy sauce
¾ cup lemon juice
1 and ¼- 1 and ½ cup brown sugar
1 tsp. salt
½ tsp. pepper

Add juice from pork (skim fat) as desired to taste. I pretty much always add all the juice. Minus fat.
Serve on tortillas with black beans and rice, cheese and tomatillo dressing.
